For my first attempt I think that I done very well, see what you think?
You will need-
200g digestive biscuits
75g butter melted
600g full fat soft cheese
250g caster sugar
150g tub of natural yoghurt
3 medium eggs
50g plain flour
1. Preheat your oven to 120c and line the base of your dish with greaseproof paper.
2. Crush the biscuits in a food processor or a food bag using a rolling pin.
3. Tip the crushed biscuit into a bow with the melted butter and mix well.
4. Push the biscuit into an even layer on the base of your cake tin and chill in the fridge until needed.
5. Whisk together the soft cheese and sugar, then beat in the yoghurt and eggs one at a time.
6. Finally beat in the flour and mix well before pouring on top of the biscuit base.
7. Bake in the oven for 45 minutes then turn off the oven and leave the cakes in there for another hour.
8. Chill overnight before eating!
Although I was really pleased with how my cheesecakes turned out I have a few tips that I would recommend ad use myself when making the cakes again. I would make the biscuit base more crumbly, I must have added too much butter too mine because it was not very soft and quite sticky. Also as you can see in the final outcome pictures the top of the cakes have cracked. This may be because I didn't put the toffee sauce on to start off with. I would recommend you either mix the sauce in with the mixture or wait until the cakes have cooled completely before adding a toffee top.
