Easter Cupcakes



Easter and Christmas are the ultimate food celebrations. Of course you are always brought so much chocolate for easter so for my easter cupcakes I thought that I would make them vanilla and butter cream rather than the traditional chocolate. Following a simple vanilla cupcake recipe and then decorating them with butter cream icing and wafer bunnies.




My recipe for any of you wanting to make your own vanilla cakes is: 

Ingredients- 
  • 110g butter
  • 110g caster sugar 
  • 2 eggs 
  • 1tsp of vanilla essence 
  • 110g self raising flour
  • 1-2tbsp of milk 
Method- 
  1. Preheat the oven to 180c and lay out your cake cases in a 12 hole muffin tin. 
  2. Cream the butter and sugar together in a bowl till pale and beat the eggs in one at a time. 
  3. Fold in the flour using a spatula adding the milk until the mixture is smooth and a dropping consistency. 
  4. Spoon the mixture into the cases evenly and bake in the oven for 10-15 minutes or until you can place a skewer in the middle and the mixture is cooked. 
The cakes turned out perfect if anything they were a little too big. However you would be able to solve this by putting less mixture in each case and making more cakes. They were the right consistency of vanilla and a perfect flavour. Being so moist already the butter cream icing complimented them straight away.
